Ingredients

  • chicken - 4 lb (1.8 kg)
  • feta cheese - 2 oz (50 g)
  • cheese - 2 oz (50 g)
  • mimolette - 2 oz (50 g)
  • bacon - 3.5 oz (100 g), smoked
  • butter - 2 2/3 tbsp (40 g)
  • spice mix - 1 tbsp, for chicken
  • salt
  • for the garnish
  • potatoes - 6 - 7
  • salt - 1 tsp
  • garlic - 1 tsp, powdered
  • cayenne pepper - 1/2 tsp
  • turmeric - 1 tsp
  • black pepper - 2 - 3 pinches
  • thyme - 1 tsp
  • paprika - 1 tsp
  • olive oil - 2 - 3 tbsp

How to make

Chop the cheeses and bacon into cubes. Mix them well. Stuff the chicken with them and sew it closed or stick the legs through the skin. Salt it and sprinkle with the spice mix. Rub it well into the chicken and put it in an oven dish.

Add a few lumps of butter and put it in a 410°F (210 °C) oven. Pour in a little water, cover with foil and bake 1 hour 40 min. Remove the foil, let it bake for another 20 min., while basting it with the sauce (released during baking).

Peel the potatoes and cut each one in half, then each half into 3 parts. Wash, dry and sprinkle with part of the olive oil. Stir well to oil them up. In a bowl, mix all the spices and sprinkle them over the potatoes.

Mix well and arrange them in an oven dish laid out with baking paper. Bake at 390°F (200 °C) for about 30 min.

You can bake the potatoes along with the chicken by putting the oven dish under that of the chicken and turning the fan on. But do this only when the chicken is nearly ready.
