How to make
Put the spices in a bowl, pour in the olive oil and stir. Smear the meat well on all sides with this mixture, rubbing them in it.
Transfer the meat to an oven dish, add the garlic cloves, dilute the tomato paste in the wine and pour it in, squeeze out the juice of the 2 lemons as well.
Cover the oven dish with aluminum foil and put it in a preheated 340°F (170 °C) oven for 2 hours, then remove the foil and bake for another 30 min. until the meat gets a nice crisp.
Serve it with rice, lamb offal or potatoes.
