How to make
Put the olive oil, wine and all the spices into a bowl. Stir until homogeneous.
Cut up the chicken; if using legs or fillets, cut them in half.
Smear the chicken legs with the aromatic mixture. Put them in an oven dish and cover with foil.
Put it in the fridge for 2 hours for the meat to marinate.
Remove from the fridge and leave them for 20 min. at room temperature.
Remove the foil and pour half a cup of water or chicken broth around the meat. Be sure to pour it around the pieces of meat so you don't wash off the spices.
Put the oven dish in a preheated 340°F (170 °C) oven and bake the meat until ready for about an hour.
