How to make
Wash the snails and boil them in salted water. Once ready, wash them again.
Saute the finely chopped onions, dock and sorrel in the oil. Pour in about 8 1/3 cups (2 L) of warm water.
To these, add the snails and boil until the grease rises to the surface.
Add the washed rice and boil until it softens.
Season with salt.
