How to make
Clean the spinach, cut it and saute it in the oil. Add the cottage cheese, break the eggs into it (set aside 1 yolk for spreading). Stir until homogeneous.
Roll out the puff pastry and cut it into 12 squares.
Form muffins by distributing the puff pastry into a muffin tray. Distribute the filling. Smear with the beaten egg yolk on top.
Bake in a heated oven until golden. Before you take the muffins out, sprinkle them with grated cheese and finish baking until it melts.
