Ingredients

  • sugar - 1 1/2 cups
  • oil - 1 cup
  • eggs - 3
  • flour - 2 cups
  • cinnamon - 1 1/2 tsp
  • baking soda - 1 tsp
  • lemons - rind of 1 lemon
  • salt - 1/2 tsp
  • nutmeg - 1/4 tsp
  • carrots - 3 cups, coarsely grated
  • walnuts - 1 cup, ground

How to make

Beat the sugar, oil and eggs with a mixer until you get a homogeneous mixture.

Mix the flour, baking soda, lemon rind, salt and nutmeg by hand.

Combine the 2 mixtures, add the carrots and walnuts and stir well.

Bake in a preheated 360°F (180 °C) oven for about 45 min.
