Wash the fillet and cut it into pieces in the shape of a rectangle, soak them in lemon juice.
Knead a dough from the flour, beer, egg and salt. Leave it to stand for 40 minutes. Put a piece of blue cheese on each piece of fish, keep it together with your fingers and roll it in flour, then dip it in the dough.
Fry immediately in very hot oil. Fry on both sides until ready and serve hot, sprinkled with chopped dill or lemon.
