Ingredients

  • eggs - 2, beaten
  • potatoes - 1 cup young, finely grated
  • dates - 1/2 cup finely chopped
  • oil - 1/2 cup
  • vanilla - 1 pack
  • flour - 1 1/2 cups
  • sugar - 1 cup
  • baking powder - 1 1/2 tsp
  • cinnamon - 1 tsp
  • baking soda - 1/4 tsp
  • salt - 1/4 tsp
  • walnuts - for sprinkling

How to make

Mix the eggs, potatoes, dates, oil and vanilla. With a wooden spoon, add the flour, sugar, baking powder, cinnamon, baking soda and salt, beat until smooth.

Spread the dough in a shallow greased tray, 5 1/2″ (14 cm) x 4″ (10 cm) in size. Bake for about 25 minutes at 360°F (180 °C), or until a toothpick comes out dry when you poke it.

Leave it to cool in the tray or on a cooking grid. Glaze the tepid baked dessert with an orange glaze. Sprinkle the top with walnuts and press on them lightly, so they stick.

Cut into rectangular slices. Store in a tightly closed container in the refrigerator.
