How to make
Peel the potatoes, cut them into round slices about 1/4 thick. Then cut each slice through the middle but not all the way through, leave them connected. You have to obtain something like an open book.
Knead the mince with the finely chopped onion, savory, cumin, breadcrumbs, black pepper and egg. Take a small ball of mince, carefully open up each potato and smear it on one of the halves using a knife, press the other 1/2 carefully on top and arrange them in a plate.
Heat oil in a pan, roll each potato sandwich in flour, shake off the excess, fry well on moderate heat on both sides so the potatoes aren't left raw.
Take them out onto a napkin to absorb the excess fat. Optionally, serve with chutney or tomato sauce.
