How to make
Peel the pears with a peeler, without removing the handles. Halve them and carefully remove the seeds. Using a small spoon, remove part of the inside and save it for later.
Brush the pears inside and out with lemon juice. Arrange in a shallow oven dish with baking paper with the carved part down. Cut the puff pastry into six rectangles and place them over the pears tightly.
Cut the excess puff pastry off with a sharp knife, leaving a cut leaf next to the handle. For the pieces of pear which do not have handles, cut the puff pastry so that it looks like a handle.
Make small holes in the puff pastry of each pear and brush them with beaten egg yolk. Bake in a preheated 390°F (200 °C) oven for about 15-18 minutes until golden. In the meantime, prepare the filling.
Crush the green cheese finely. Chop the pears’ insides finely and add it to the cheese. Chop the walnuts and add half of them to the stuffing.
If you wish, add 1 tablespoon of brandy or other aromatic alcohol. Mix well. Cool the pears briefly.
Using a spatula, take them out of the tray. Arrange in a plate with the carved parts up. Stuff them with the filling and sprinkle with the remaining walnuts.
