How to make
Boil the washed and pre-soaked beans until lightly softened. Add the onion, carrots and celery that you've cut into slices, the peeled cloves of garlic and some oil.
Once boiled, add the salt and finely chopped tomatoes. Pour the mixture into an oven dish and sprinkle it with spearmint (or savory or parsley). Add black pepper, bay leaf and lemon slices.
Top with slices of peeled tomatoes. Pour with the remaining oil and bake in the oven for 30 minutes.
