How to make
Soak the beans in water the night before and rinse them the next day. Put them to boil on medium heat with a little salt and oil. Once ready, drain and transfer them to a tray.
Cut and sauté the leeks, carrots and celery in a little oil until soft. Add finely chopped tomatoes, chopped parsley, spearmint, savory and chopped garlic cloves, milled black pepper and salt to taste. This mixture is poured over the mature beans and covered with round tomato slices.
The remaining oil is heated, fried with paprika and poured over the beans. Bake the plakia in a moderately pre-heated oven.
