Ingredients

  • flour - 2 lb (1 kg)
  • eggs - 2
  • yoghurt - 3 4/5 cups (900 ml)
  • salt - 1 tsp
  • baking soda - 1 tbsp
  • oil - 2 cups (500 ml)

How to make

Pour all of the ingredients in a bowl (except the oil) and knead a dough. Once it's ready, put it in a large tray with the bottom covered with flour (there needs to be more flour than what is used for sprinkling so that the dough doesn't stick to the tray), smear with oil to prevent a crust from forming.

Then roll it up with a towel and let it rise until the dough relaxes. Pour 2 cups of oil in a pan and place on a heated stove. Cut off a small piece of the dough, stretch it out to the desired shape (there needs to be a hole in the middle) and put it in the highly heated oil.

Once the mekitsa rises to the surface, press down on it with a fork and keep it submerged until it becomes bloated. This way it will become soft and fluffy on the inside. Fry until ready. Serve with feta cheese or jam.
