"Back in the day I was never worried about my mekitsi being fried but when there`s a healthy alternative, be sure to try it. Don`t forget that they`re tasty too."

  • eggs - 2
  • flour - 3 1/3 tbsp (50 g) white
  • whole grain flour - 3 1/3 tbsp (50 g)
  • yoghurt - 2 tablespoons
  • feta cheese - 7 oz (200 g)
  • soda - 1 tsp
  • oil - to grease the pan

How to make

Mix all of the ingredients in a bowl and stir well.

Leave the mixture for 15 min., then scoop with a ladle or giant spoon and pour into an oiled pan.

They're kind of like American pancakes, so know that it's easiest to flip them over with a large spatula.
