How to make
Sift the flour in a bowl, add the salt and stir. Dissolve the yeast and sugar in the warm milk, add the egg which you've beaten with a fork and mixed with the oil, stir. Pour the liquid mixture over the dry one and stir until it becomes too thick to stir, then knead the dough with your hands.
Cover the dough with plastic wrap and leave to rise for 1 hour in a warm area. Put the dough onto a lightly floured counter and without kneading roll out a sheet 1/2″ (1 cm) thick. Cut out round pitas using a glass or ring, leave them for 30 min. to rise.
Heat generous amounts of oil on a moderate stove, lower the heat to low and fry the fritters to the desired crisp.
Serve warm with your favorite jam, with feta cheese or just sprinkled with powdered sugar.
