How to make
First, prepare the sourdough by dissolving the crushed yeast and sugar with the warm water, let it activate for 10 minutes.
In a bowl sift the flour and add the salt, mix and form a well. Beat the eggs in it and add the yeast. Start mixing, pouring in the warm milk as well, knead a soft dough. Wrap the dough in a clean cloth and let it rise in a warm place for 1 hour.
Knead the risen dough and divide into 7 parts, shaped into balls.
On a floured surface, roll out a ball into a thin crust, spread with the pre-mixed melted butter and oil and sprinkle with crumbled cheese.
Roll up the crust and roll it into a snail, tucking one end of the roll under the snail. Press each of the cheese rolls with your hand to shape it into a small loaf and place it on a tray lined with baking paper.
This is how you proceed with all seven balls, lining them up in the tray.
Leave the cheese rolls to rise for 40 minutes and during this time prepare the topping. Beat the eggs, add the yogurt and the crumbled cheese, mix until you get a homogeneous mixture.
Pour the mixture evenly over the risen cheese rolls and place the tray in the oven preheated to 390°F (200°C).
After they acquire a nice color on top, cover the cheese rolls with aluminum foil and reduce the oven to 300°F (150°C) and bake for another 10 minutes.
Remove the tray and cover it with a clean towel for 10 minutes to steam.
