  • yogurt - 4.2 oz (120 g)
  • flour - 12 oz (350 g)
  • vanilla essence - 1 tsp.
  • italian sourdough - 5.3 oz (150 g) Lievito Madre
  • butter - 2.8 oz (80 g)
  • sugar - 2.1 oz (60 g)
  • cream
  • sugar - 3 tbsp.
  • milk - 10 fl oz (300 ml)
  • eggs - 1
  • starch - 1.4 oz (40 g)
  • vanilla essence - 2 tsp.

  • powdered sugar - for sprinkling
  • cherries - 10.5 oz (300 g)

How to make

The recipe is made with sourdough, but if you don't have any, then you should increase the butter and yogurt to 7 oz (200 g) each, and the flour to 0.9 lb (400 g).

Pour the yeast into the bowl of a mixer. Add the pre-sifted flour and a pinch of salt, the vanilla and the sugar. Put it on the lowest setting and knead until you get a smooth dough.

While the dough is kneaded, add the butter cut in pieces.

Wrap the butter dough in plastic and let it rest for an hour.

Meanwhile, prepare the cream. Pour the milk into a pot along with the starch, vanilla, sugar and egg.

Put it on the stove and stir until the cream thickens. Leave it to cool.

Pit the cherries.

Divide the finished dough into 6 equal parts and roll out each one into a long strip that is about 10 cm wide.

Put cream in the middle of the strips and cherries on top of it. Carefully roll both ends inward and flip one part over to cover the cherries. Cover with the other side. Roll up into round small rolls.

Spread the rolls with melted butter and place them on a baking tray lined with baking paper.

Preheat the oven to 370°F (190°C) and bake the sweet rolls until nicely browned. Sprinkle with powdered sugar and serve.
