How to make
Beat the sugar with the butter into a fluffy cream. Add the crumbled biscotti, walnuts, milk, water, figs, raisins, cocoa and crumbled meringues.
Make the caramelized sugar:
Heat the sugar in an oiled pan until golden and leave it to cool. Crush the caramelized sugar into small pieces and add it to the above mixture. Stir carefully to get a uniform mass. Form balls with wet hands and stretch out one end so they look like snouts.
Stick almonds on top to form the spikes. Arrange the hedgehogs onto a cooking grid and pour on melted chocolate over them. Once the chocolate hardens, move them to a serving platter and put them in the fridge to cool.
