"Use the most fragrant herbs from your garden to prepare a pesto worth remembering."

Ingredients

  • basil - 1 large bunch
  • oregano - 1 fresh bunch or marjoram
  • parsley - 1/2 bunch
  • dill - 1/2 bunch
  • garlic - 7 - 8 cloves
  • anchovies - 3 - 4 fillets
  • olive oil - 1 cup, extra virgin
  • pecorino - 1 cup, finely grated, or parmesan
  • pine nuts - 2/5 cup (100 g), or walnuts
  • lemon juice - from 1/2 lemon

How to make

Wash the herbs and dry them. Put them all in a blender along with the garlic, anchovies, pine nuts and lemon juice.

Begin blending and gradually pouring in olive oil. Once you get a fine paste and all of the olive oil has been poured in, stir carefully with the grated Pecorino or parmesan.

Serve thus prepared herb pesto on toast.
