Ingredients

  • white cheese - 8.8 oz (250 g) slice (about 2 cm thick)
  • eggs - 1 pc. XL
  • lemon juice - 2 - 3 drops
  • dried parsley - 1 tsp.
  • dried thyme - 1 tsp.
  • tarragon - 1 tsp.
  • oregano - 1 tsp.
  • hot pepper flakes - 2 pinches or by taste
  • flour - for rolling
  • breadcrumbs - for rolling

How to make

Mix equal amounts of flour and breadcrumbs. There are no strictly defined quantities for them, just judge by the size of the cheese slice. One cup of everything should be sufficient to cover the surface of the cheese abundantly. If you have any left, you can use it to bread other products.

Separate the egg white from the egg yolk. Beat them separately, by adding drops of lemon juice in each.

Mix all of the herbs and spices. Add a herb that you like or remove one that you don't particularly like but is present in the recipe.

Remove the cheese from the brine and without drying it, roll it in the flour and breadcrumbs. Dip it in the yolk, by covering the entire surface of the cheese with it and sprinkle it with some of the spices, so that they stick well. Cover it again with a thick layer of flour and breadcrumbs and dip it in the egg white, repeating the procedure (the egg white should be well beaten, so that you can see thick bubbles).

Sprinkle it again with the remaining herbs.

Put the cheese slice in a greased baking pan. You can cover it with aluminum foil, but be sure to grease it, otherwise the bottom of the crust will remain on it.

Put it in a preheated oven at 430°F (220 degrees) and bake it until it aquires a golden brown color, which is either darker or lighter - depending on how you like it.

Serve the delicious baked cheese warm and enjoy it with a glass of rose, red wine or beer.
