"A quick and wonderful carrot cake, without a gram of sugar and only with natural products."

Ingredients

  • For the base
  • dates - 7 oz (200 g)
  • dried blueberries - 1.4 oz (40 g)
  • white raisins - 1.4 oz (40 g)
  • carrots - 8 oz (220 g)
  • walnuts - 2.1 oz (60 g)
  • coconut flour - 2.5 oz (70 g)
  • vanilla essence - 1 tsp.
  • For the cream
  • cream cheese - 7 oz (200 g)
  • sour cream - 9 oz (250 g)
  • liquid stevia sweetener - 4/5 tbsp (12 ml)
  • a little lime peel

How to make

Clean, wash and cut the carrots into pieces.

Clean the dates from the pits and peel them.

Mix all the ingredients for the batter together. Grind them in a blender or chopper in several batches. I had 4 batches.

Mix the finished mixture and pour it into a baking dish with a drop-bottom, which is covered with cling film. Spread it evenly and press it lightly with a spoon.

Mix the cream cheese with the stevia, add the sour cream and lime peel.

Cover the carrot cake batter with the prepared cream.

Decorate the finished carrot cake as desired. I used walnuts and raisins.
