In a bowl, mix all the ingredients - soy sauce, mustard, freshly squeezed lemon juice, honey, ground black pepper and chili flakes.
Add the onion, cut into crescents and sprigs of fresh rosemary.
Mix everything and pour the resulting marinade over the pork.
