How to make
Don't be intimidated by the ingredients, the chipotle dip recipe is quite easy. I would like to clarify that the CHIPOTLE pepper is the dried version of Jalapeño. So, if you want chipotle sauce, then definitely use Jalapeño. If not, no problem, the recipe works with almost any type of red chili pepper.
I start 1 day in advance by drying the jalapeño pepper in the oven. It takes about 12 hours at a low temperature, but it's worth it. If you want, once it's ready, you can smoke it a little, as it adds exactly that smoky flavor to the chipotle sauce. If you don't have the time, don't.
Once the peppers are ready, I put them in a blender and grind them. I take them out of there and mix them with the ketchup and set aside for a while.
The rest is easy, we put all the ingredients in the blender and blend until the delicious dip is ready. Finally, I add the chipotle mixture and blend again until a homogeneous mixture is obtained.
The spice of the chipotle is balanced by the sweetness of the honey, the richness of the yogurt and mayonnaise, and the lightness of the lime. The garlic adds a spicy note and a little olive oil make the spicy sauce not as spicy.
The Chipotle Dip will pair beautifully with your quesadillas, burritos, even homemade doner.
