Ingredients

  • fat fish - about 4.4 lb (2 kg) silver carp or carp
  • onion - 2 onions
  • carrots - 2
  • tomatoes - 3 - 4
  • red peppers - 2
  • salt - 2 tbsp.
  • rice - 1 cup
  • garlic - 2 cloves
  • oil - 3 tbsp.
  • dill - 1 tbsp.
  • black pepper

How to make

The fish is cleaned and washed with cold water and halved lengthwise. If your pan is small, remove the head and tail (you can make a delicious fish soup from them). Sprinkle generously with salt, black pepper, cumin and leave it aside for at least an hour.

Peel and finely chop the tomatoes and carrots, clean and finely chop the onion and garlic, clean, wash and strain the rice.

In a pan, fry the onion, one clove of garlic in the oil, gradually add the carrots and peppers. Stir until the vegetables soften. Add the rice. Stir until it becomes transparent.

Pour the tomatoes along with the juice and when it evaporates, add 1.5 cups of water. Stir, add the remaining garlic and wait for the rice to swell. When this is done, season the whole mixture with salt and black pepper to taste and pour it into a greased baking dish.

Sprinkle with dill and add the fish on top, either in half or in pieces (depending on the pan's capacity). Also make a nest in the filling so that it does not stick out from above.

If necessary, add a little more water and bake the fish in a preheated oven at 390°F (200°C) for about 35 minutes.
