"Serve this variation of Baba Ghanoush with toasted bread. You can drizzle with olive oil and pumpkin seeds."

Ingredients

  • pumpkin - 1.1 lb (500 g) cleaned and peeled
  • garlic - 2 cloves
  • olive oil - 1 1/3 tbsp (20 ml)
  • sesame seeds - 0.7 oz (20 g) lightly toasted
  • lemon juice - 1 1/3 tbsp (20 ml)
  • cumin - 1/2 tsp.
  • paprika - 1/2 tsp.
  • salt - 1 tsp. or to taste

How to make

Wrap the pumpkin pieces individually in lightly greased aluminum foil and bake for 20-25 minutes at 360°F (180°C).

The baking time depends on the size of the pumpkin pieces.

Check them with a fork to see if they are soft enough before removing them from the oven.

Let the pumpkin cool down and then put it in a blender.

Add the garlic, salt, spices, lemon juice, sesame seeds and olive oil.
