Arabic Eggplant Salad (Baba Ganoush) is a traditional dish from the Middle East - a variety of kyopoolu, also known as Hatzilim betahina in Israel (tahina - sesame tahini).
The eggplant is roasted and peeled. You can grill it, in a pepper roaster, in the oven or directly on the ceramic hob.
One the eggplant cools, peel it and mash with a fork. Do not blend it in a kitchen blender, because it will become too liquid and the taste of the salad will be better when the texture of eggplant is there.
Then add the crushed garlic cloves, salt, black pepper, cumin, the juice of half a lemon and sesame tahini.
Mix everything well and transfer it into a suitable serving plate.
Sprinkle the vegetable salad with parsley and drizzle it with olive oil.
