Ingredients

  • eggplants - 2 - 3
  • garlic - 1 clove
  • onions - 1 head
  • tomatoes - 1
  • peppers - 1
  • parsley - 5 - 6 bunches
  • spearmint - 1 stalk
  • olive oil - 6 tablespoons
  • lemon juice - 2 tablespoons
  • salt - to taste

How to make

Pierce the eggplants in several places and bake them for 10-15 minutes at 430°F (220 °C). Chop the onions, spearmint, peppers and tomatoes finely.

Peel the baked eggplants and finely chop them, crush the garlic. Place everything in a bowl, season with salt, olive oil and lemon juice and mix well.
