Ingredients

  • eggs - 4, L
  • sugar - 2 cups
  • water - 1 cup /at room temperature/
  • oil - 1/2 cup
  • vanilla essence - 1 tsp. /liquid/
  • flour - 3 cups
  • baking powder - 0.35 oz (10 g)
  • cocoa - 2 tbsp. or to taste

How to make

For the measurements, I use a 250 ml cup. One batch comes out to 30 homemade muffins.

First, grease your baking muffin molds with butter and put them in the fridge while you make the mixture.

My baking molds are shaped like shells, but you can also use regular ones.

Beat the eggs and sugar very well. The muffin mixture should become fluffy and light. Then add the oil, water and beat again. Finally, sift the flour and add the baking powder. Beat again. Divide the mixture into two parts. I make sure the white part is less, I add it in the middle.

In the other part, add the cocoa and beat. First, pour the brown mixture, in the middle the white and on top again from the brown mixture. Finally, I stir with a wooden skewer, but you can skip this part.

The muffins are baked in a preheated oven with the fan setting on at 360°F (180°C) for 20 minutes. I place two trays in it at once. One tray is for 12 muffins.

That's why I baked the last 6 in the air fryer. I have a small tray for it. I bake them in the air fryer on the bake-175°C program for 20 minutes. They don't need to be turned, they turn out great.
