Ingredients

  • beef - 2 lb (1 kg)
  • oil
  • soya sauce - 1/4 cup
  • sherry - 1/2 cup, dry
  • garlic - 4 cloves
  • ginger - 2 roots, sliced
  • leeks - 1 stalk, chopped into 3/4" (2 cm) long strips.
  • cinnamon - 1 stick
  • anise - 1 tsp
  • basil - 4 sprigs
  • sugar - 1 tablespoon
  • gelatin - 2 tablespoons
  • water - 1/4 cup cold
  • sesame oil

How to make

Wash the meat and dry it. Fry it in a little oil until browned on all sides. Combine the rest of the ingredients in a large pot. Let them boil.

Add the meat and enough water to cover it. Lower the heat of the stove to the lowest possible level and boil at least 2 hours. Turn off the heat and leave it to soak for 1 hour. Remove the meat, cool it and cut it into thin slices.

Strain the liquid and remove the fat. Dissolve the gelatin in the cold water, and add them to the strained liquid. Simmer until the liquid is reduced to 2 - 2 1/2 cups and leave it to cool.

Arrange the meat on a pre-coated with sesame oil serving plate. Pour the cooled liquid on top. Chill in the refrigerator for several hours before serving.
