How to make
For this easy pie, knead the base ingredients in a large bowl. Mix them with a spoon until you get a crumbly dough.
Transfer the dough into a 10″ (25 cm) diameter pie tin. Spread the dough into the tin, pressing it with your fingers to the bottom and sides and until a thin, even layer is obtained.
Put the prepared base in the refrigerator until you prepare the filling.
Boil the pumpkin, strain it from the water and mash it to make a puree.
Put all the ingredients for the filling in a large bowl and beat them with a mixer until the mixture is homogeneous.
Pour the filling over the prepared base. Bake the pumpkin pie for about 40 minutes in a preheated oven at 360°F (180°C), until the pie is golden on top.
Once the easy pumpkin pie is ready, let it cool, cover it with foil and refrigerate it for a few hours.
