Ingredients

  • For the first dough
  • flour - 2.5 oz (70 g)
  • water - 3 1/3 tbsp (50 ml)
  • fresh yeast - 0.5 oz (15 g)
  • sugar - 1/2 tsp.
  • For the second dough
  • flour - 9 oz (250 g)
  • red peppers - 2.1 oz (60 g) roasted, peeled
  • water - 4 tbsp (60 ml)
  • olive oil - 1 tbsp (15 ml)
  • sugar - 1/2 tsp.
  • salt - 1 tsp.

How to make

Prepare the first dough by combining all the ingredients for it and mixing it well with a spoon until you get a thick, sticky paste. Let it double in size for 15 minutes.

Sift the remaining flour for the main dough (250 g) into a bowl and pour the olive oil, slightly warmed water, salt, sugar and the first dough into it.

Put the peppers in a blender or food processor and grind them into a fine paste. Add them to the flour and knead a smooth dough, transferring it to a lightly floured surface.

Shape it into a ball and let it rise for 30 minutes, covering the bowl with a clean towel.

Grease the risen dough and put it in a rectangular mold of the standard for sponge cakes or whatever you have. Let the bread rise again and double in volume.

Bake in a preheated oven at 390°F (200°C) for about 30 minutes or until an appetizing color is obtained. Cool it on a wire rack and cut it into slices.
