Using a small spoon, gouge out balls the size of a large hazelnut from each potato. Salt the ready potatoes and fry them in the heated butter on medium heat until browned.
Pour on the sauce from the roasted meat over the fried potatoes, which has been diluted with a little hot water if necessary to make a broth. Sprinkle with parsley and serve the French potatoes immediately.
Optionally, you can mix the potatoes with 9 oz (250 g) finely chopped and fried bacon with the finely chopped green onions.
