How to make
Peel the potatoes, cut them into cubes and put them in a pot of boiling salted water and boil. Put the tarragon in a bowl, pour in the vinegar and let it sit for a few minutes.
Then add the mustard and beat with a fork. In the bowl, pour in the olive oil, salt, add the chopped onions, rosemary, parsley, basil and garlic and mix them well.
Pour the fragrant mixture over the boiled potatoes. Serve well- cooled.
