Ingredients

  • macaroni - 1 package
  • pine nuts - 2/5 cup (100 g) (or others)
  • spinach - 10.5 oz (300 g)
  • parmesan - 7 oz (200 g)
  • cheese - 5.5 oz (150 g), grated
  • olive oil - 1 - 2 tablespoons
  • oil - 1 tablespoon
  • eggs - 4
  • butter - 1 1/3 tbsp (20 g)
  • salt - 1/2 tsp

How to make

Boil the macaroni, drain them into a bowl and mix it with the butter while warm. Soak the spinach in water. Crush the pine nuts and put them in preheated oil to braise for 5 minutes.

Then remove immediately and in the same pan, put the olive oil, a pinch of salt and 1 tablespoon of water. Wash the spinach very well. Cut off the stems and shred the leaves finely, then add them to the pan.

Fry for 5 to 10 minutes and break the 4 eggs over it. Once the egg whites and yolks cook, take the pan off the heat. In a lightly greased tray, combine the spinach mixture, macaroni and pine nuts.

Sprinkle it with parmesan and grated cheese and bake until the dish takes on a light, pleasant tan.
