Ingredients

  • yellow cheese - 2.8 oz (80 g)
  • eggs - 5
  • milk - 15fl oz (450 ml) low - fat (0.1%)
  • flour - 1/2 cup
  • butter - 3.5 oz (100 g)
  • nutmeg - 1 pinch
  • black pepper - to taste
  • salt - to taste

How to make

Separate the yolks from the whites, put the whites for 6-7 min in the refrigerator and then beat them well.

Heat the butter in a pan and fry the flour in it, stirring constantly so that lumps do not form.

Pour the boiling milk, season with nutmeg, black pepper and salt to taste and cook the mixture for 1-2 minutes, stirring constantly.

Remove the dairy sauce from the heat, add to it the grated cheese and the yolks and mix until a homogeneous mixture is obtained and finally carefully add the egg whites and mix.

Pour the mixture into 6 lightly floured clay pots and put them in an oven heated to 430°F (220°C) for 12-13 minutes.
