How to make
The medlars must be well ripe. Wash them well and put them in a pot.
They are poured with lukewarm water, which should be at least three fingers above the fruit.
Boil over moderate heat for about 60 minutes.
They are crushed and strained through a sieve /colander/. The strained mixture should not be too thin.
Pour into a wide pot and boil until it the marmalade thickens, stirring so it doesn't stick.
Depending on the thickness, it is boiled for about 2 hours. Add the sugar and continue to mix.
The ready medlar mixture is poured into jars and then boiled for about 10 minutes until the lid seals.
This is a very tasty and aromatic jarred medlar marmalade.
