How to make
Mix the cumin, caraway, green pepper and sea salt in a bowl, grind them well. Rub the meat with the mixture. Bake it in a dry pan.
Flambe the meat with the brandy, reduce the heat. Add some water.
Transfer the meat in the pan skin side up. Sprinkle it with the brown sugar. Bake for 20 minutes at 300°F (150 °C).
