How to make
Beat the softened butter with the sugar, lemon juice and rind. Add the eggs one by one. In a separate bowl, mix the flour, cinnamon, vanilla sugar and baking powder. Add these to the mix.
You should get a relatively thick, oily dough. Pour it into a suitable form for baking and level out the dough. Top with the bisected apricots but do not press.
Bake the cake in a preheated 360°F (180 °C) oven. While warm, sprinkle it with powdered sugar. Enjoy!
