Ingredients

  • eggs - 6 pcs.

  • sugar - 1 cup
  • salt - 1/8 tsp.
  • butter - 1 cup melted (or coconut oil)
  • coconut flour - 2 cups
  • baking powder - 4 tsp.

How to make

Separate the egg whites from yolks. Beat the egg whites with an electric mixer well (like whipped cream). Set aside.

Add sugar, salt and melted butter /or coconut oil/ to the yolks. Beat until smooth (1 minute).

Stir the baking powder into the flour, then add this to the yolk mixture.

Add the coconut milk with the coconut shavings. Beat for 1 to 2 minutes or until the cake layer ingredients are well combined.

Add the beaten egg whites to the batter with a spatula or use your electric mixer on low speed. Beat enough blend everything (20 seconds).

Pour batter into prepared baking pans and bake the coconut cake layer for 30 to 40 minutes or until a fork inserted comes out clean.

Chill the coconut flour cake layers before adding the glaze.
