"Aromatic quince jam - health and enjoyment from nature"

Ingredients

  • quinces - 8 large (about 2 kg)
  • sugar - 3.3 lb (1.5 kg)
  • water - 8 cups (2 L)
  • lemons - 1
  • citric acid - 1 1/2 tsp.
  • geranium - 4 - 5 leaves, optional

How to make

Quinces contain vitamins and many other valuable substances, so they must be present in our diet. They also serve as a natural air freshener, purifying the air in the room.

We wash and clean the quinces. Next to us we place a bowl of water in which we have squeezed the lemon juice. We put the chopped pieces of quince in it so that they do not turn black.

Put the sugar and water in a suitable pot. We boil them until a syrup is obtained, which continues to simmer over low heat until it thickens, for about 15 minutes.

In a blender, with a grater attachment, grate the quince pieces, by taking them out of the lemon water and do it quickly. Pour them into the sugar syrup. We also add the petals of geranium.

Boil for 30 minutes and remove from the heat. The jam is left for 24 hours and we finish it the next day. Soaking in the sugar syrup, the quinces become transparent.

The jam is ready when you place a drop of it on a cold porcelain plate and it is not runny. 5 minutes before removing from the heat, add the citric acid dissolved in a spoonful of water.

We prepare dry jars and fill while the jam is still hot. Turn the lid upside down to seal and cover with a towel to cool slowly.

Tip: You can add walnuts to the jam. Don't throw away their skins and seeds, because they make a great pestil. The high content of pectin in them and their wonderful aroma make them the perfect fruit for making aromatic delights.

Dried, they are very useful for coughs.
