Cut the rabbit into portions and the onion into larger pieces. Stew them in the fat and when they are fried, sprinkle paprika and pour two glasses of water.
Cut the zucchini into cubes, the peppers into strips or cubes, and puree or finely chop the tomatoes.
Add the vegetables to the meat and leave them to simmer. Cut the new potatoes into large pieces and pour them into a plate or tray.
Pour the semi-cooked rabbit with the vegetables over the potatoes, sprinkle with black pepper and garlic and put it in the oven until completely cooked and roasted. Finally, sprinkle with finely chopped parsley.
The roasted rabbit with new potatoes and zucchini is ready.
