How to make
Clean and dry the vegetables - cut the eggplants and zucchini into circles. Cut the onion into thick crescents, the peppers - in pieces. Make a marinade of sufficient amounts of vinegar, soya sauce, olive oil and spices, and stir it all well.
Immerse each vegetable in it and arrange them on the barbecue to roast on both sides. Place the finished vegetables in a container with a lid.
Serve them as a side dish to meat dishes, or as a main dish with some boiled rice.
