"The lunch of champions - tender steaks with a crunchy breading that we recommend you garnish with a glass of wine."

Ingredients

  • pork legs - 2 lb (1 kg) meat
  • red wine - 2/5 cup (100 ml)
  • soya sauce - 1 tablespoon
  • olive oil - 3 - 4 tablespoons, or sunflower oil
  • black pepper - 1/2 tsp
  • white pepper - 1/2 tsp
  • oregano - to taste
  • garlic - 1/2 tsp, powdered
  • cumin - 1/3 tsp, crushed
  • rosemary - 1 - 3 pinches
  • for the crumbing
  • eggs - 4
  • cornflakes - 2/3 cup (150 g) crushed
  • flour - 4/5 cup (200 g)

How to make

Cut the pork leg into steaks, or you can use ready-made ones. Tenderize them well, sprinkle with salt and black pepper and marinate them for 1 night in the red wine, soya sauce and spices for pork, if desired.

Mix the white pepper, oregano, cumin, rosemary and olive oil together. Smear the pork steaks nicely with this spice blend. Roll each steak well in flour, then in beaten egg and finally in finely crushed cornflakes.

Drop them to fry in highly preheated oil to crisp, then turn down the heat to fry well. Drain the well fried steaks with cornflakes on paper towels or a grill. Serve with a garnish as desired.
