How to make
Wash our figs well and cut their stems. Sprinkle them with sugar and place them on the stove over low heat.
Once they start to boil, gently stir them so that they do not become mushy. When they boil, leave them for 5 minutes and then remove them from the heat.
During boiling, a dark foam is formed, which is removed.
Remove the figs and let them cool aside. This procedure is repeated several times.
Add citric acid when you like the color of the fig jam. It is the citric acid that retains this color.
When you like the density of the jam, remove it.
Start pouring it into jars while still warm, close with lids and turn them with the lids facing down.
Leave them until they cool and store the Whole Unpeeled Fig Jam for the winter.
