How to make
Clean the figs from the stems and wash them. Put the water and sugar in a deep pot and put them on the stove to boil.
When the syrup boils, add the figs with a slotted spoon. The jam is boiled until it begins to thicken.
Decide for yourself how thick you want it and keep in mind that as the jam cools, it thickens a bit more.
Just before turning it off, add the vanilla and citric acid. Let it boil for another 5-6 minutes.
Let the jam cool for at least 6-7 hours and then put it in jars.
Sterilize for 5-10 minutes to seal the the jar lids.
The delicious whole fig jam is ready.
