How to make
We clean the partridges, wash them and salt them. At the bottom of a deep dish, put the finely chopped onion, the celery (cut into small pieces), the parsley, the parsnips, a few bay leaves, the bacon and the ham.
We put the partridges on top, add the oil and let everything stew.
After that, we transfer everything to a greased baking pan and put them to roast, occasionally pouring them with the sauce from the baking pan.
When the dish is ready, take out the partridges and place them in serving plates.
Strain the sauce and add the flour, mustard and wine to it and mix very well. Let it boil until it thickens.
Add sugar and lemon and orange juice and boil a little more.
After the sauce is ready, we pour the partridges with it.
