How to make
The eggs and sugar are beaten until a smooth and fluffy cream is obtained. Then the two vanillas are added to them along with the milk. It is beaten again.
Next up is the flour and the baking powder mixed into it. After they are also added, everything is beaten with a mixer until a fluffy mixture is obtained. Set aside the sponge cake layer.
Next up is the caramelization of the peaches. Put the sugar in a pan and wait until it starts to melt.
When this happens and it acquires a caramel color, it is removed from the heat and immediately distributed in a well-greased baking pan or other mold.
Place the compote peaches on top of the caramel while it is still hot. Spread the batter over them.
The fruit cake is baked in a moderately heated oven until done. After it is baked, the cake is taken out of the oven and turned into another dish so that the peaches are on top.
If desired, before turning, the sponge cake layer is poured with the compote juice.
