How to make
Beat the soft butter with the sugar to a smooth cream. Add the yolks one by one while continuously whipping. Separately, beat the egg whites to thick snow.
Carefully mix half the flour with the egg whites and mix the remaining flour with the yolk mixture with the baking powder. Caramelize 1 cup of sugar at the bottom of a baking tin.
Arrange the peaches in thick slices on top and pour on the cake mixture. Clean 1 peach from its pit. Reassemble the two halves and put them in the middle of the cake.
Put the cake to bake in a moderately heated oven until ready. Invert the ready and slightly cooled cake with peaches onto a tray.
