  • anchovies - 11 lb (5 kg)
  • coarse salt - 2.2 lb (1 kg)
  • apple cider vinegar - 4 cups (1 L)
  • water - 1.3 gal (5 L)
  • black pepper
  • bay leaf

How to make

The fish is cleaned from the heads and guts.

A brine is made from vinegar, water and salt. The fish is placed in it and it is left to stand for 48 hours.

After the fish is removed from the brine, it is left to drain for several hours or all night.

Arrange it in medium-sized jars, by adding 2 bay leaves and 5-6 peppercorns.

About one liter of oil is brought to a boil. A crust of bread is added and when it starts to fry, the oil is turned off.

Pour the cooled oil over the fish in the jars.

The delicious marinated fish is ready to eat after 4-5 days. The longer it sits, the tastier the fish becomes!
