How to make
Wash large figs well and cut off the stalk from above with scissors.
Arrange them in a deep baking pan next to each other, sprinkle sugar on top, put a cinnamon stick, pour the water and put them in a heated oven at 360°F (180°C).
Bake in a moderately heated oven until done, remove the baking pan, add citric acid, stir while still hot and carefully pour with a ladle into dry jars.
Close with a lid and turn upside down until it cools - for 1 night.
The fig jam is kept in a dark and cool place until winter, if any left.
I have not stirred the jam once, I just keep an eye on it until it thickens.
